Wisconsin’s Own Silver Spring Foods Takes Grand Champion Honors At World-Wide Mustard Competition.

Proving the old adage “when youre hot, you’re hot,” Silver Spring Foods, Inc. has taken top honors at this year’s Napa Valley Mustard Festival, earning the Grand Champion title for its popular Silver Spring Deli Mustard. The Napa Valley Mustard Festival, Feb. 2 – March 29, brings together gourmet food and wine lovers from around the world. Silver Spring will receive the awards during a dinner at Black Stallion Winery in Napa, Calif., on March 14.
To capture the Grand Champion title, Silver Spring Deli Mustard won its category (deli/brown) and then was selected as the top product among winners from the 19 categories in the competition. Silver Spring Deli Mustard is a stone-ground blend of brown mustard with a hint of horseradish.
The spicy concoction was the favorite from nearly 400 entries and satisfied the discriminating palates of more than 80 chefs, food writers and mustard lovers to win the event’s top prize. It is the first time deli mustard has won the top honor in the competition. In addition to the Grand Champion honor, Silver Spring also placed among the top three in four different categories. The award winners are:
» Beer’n Brat® Mustard, a lively combination of mustard and fresh horseradish, took a silver medal in the Horseradish Category.
» Habanero Mustard, a mixture of hot habanero peppers and mustard, captured a bronze medal in the Pepper Hot Category.
» Peppadew™ Mustard Sauce, made from South African sweet picante peppers, intrigued judges with its sweet and tantalizing flavor. The unique sauce won a bronze medal in the Exotic Category.
» The Organic Deli Mustard was a palate pleaser with its stone-ground blend of organic mustard seed and select organic spices. It won a bronze medal in the Organic Category.

Peppadew, grown only in South Africa, is the first truly new fruit to be introduced in the world market since the kiwi fruit more than 25 years ago. Branded Peppadew because it is peppery yet sweet and tantalizing like the morning dew, its bright red color and crisp texture set this fruit apart.

Silver Spring Organic Mustard Takes Gold at Napa Valley Mustard Festival

Silver Spring Gardens, Inc. has continued its award-winning ways by being recognized for the sixth straight year at the Napa Valley Mustard Festival. Silver Spring will be awarded five medals at the March 16 ceremony, highlighted by their Organic Dill Mustard earning a gold medal in the organic category.
To accompany the gold medal, Silver Spring’s Organic Horseradish Mustard will be awarded the bronze, earning them two out of three medals to dominate the organic category. Silver Spring will also be awarded silver medals for three mustards including:
- Deli Style Mustard for the deli brown category
- Consumer-favorite Beer‘n Brat Mustard in the horseradish category
- Silver Spring’s new Peppadew Mustard Sauce, which features the exotic sweet piquante fruit found only in South Africa, in the pepper category
A recent study from online market analyst Datamonitor found that many Americans are trying to eat more healthily by purchasing organic products rather than standard versions.

Silver Spring Gardens: Purchases Thor-Shackel Horseradish Company

Ed Schaefer, president and CEO of Silver Spring Gardens, the world's largest grower and processor of horseradish products, said the firm will produce Thor’s Hot Horseradish, Thor's Nippy Horseradish Sauce, Thor’s Prepared Beet Horseradish, Thor’s Cocktail Sauce and several other labels.
Both Thor–Shackel Horseradish Company and Silver Spring Gardens have been privately owned and operated for 75 years. Thor–Shackel got it start by selling fresh horseradish products at Chicago’s famous Randolph Street Farmers Market. Silver Spring Gardens will sell the Thor product line to grocery and finer food stores under the Silver Spring brand, worldwide.
The acquisition is the second firm Silver Spring Gardens has purchased in the last six months. The company recently bought the Waldorf, Nuevo Sol and Bella Migliore brand labels from Ventura Foods, LLC, a $1.6 billion privately held company.
Schaefer said the recent acquisitions provide a perfect fit for Silver Spring Gardens, which is expanding its line of products and capabilities as a result of new efficient state–of–the–art technologies available in the new 100,000 square foot plant that recently opened.

Silver Spring Gardens Purchases Portion Control Condiment and Sauce Products from Ventura Foods

Silver Spring Gardens, Eau Claire, WI, has acquired the Waldorf, Nuevo Sol and Bella Migliore brand labels from Ventura Foods, LLC, of Brea, California, a leading national manufacturer and marketer of cooking oils, mayonnaise, dressings and sauces.
Ed Schaefer, president of Silver Spring Gardens, the world’s largest grower and processor of horseradish, said the firm will produce Waldorf portion control jams, jellies, syrup, honey, condiments and salad dressings, and Nuevo Sol portion control taco sauces to market to the foodservice industry.
All manufacturing equipment has been moved to the new state of the art Silver Spring Gardens 100,000 square foot plant that recently opened in Eau Claire. Ventura Foods, LLC, a $1.6 billion privately held company, closed their plant in Waukegan, Ill., following the sale to Silver Spring Gardens.
Schaefer said the acquisition is a perfect fit for Silver Spring Gardens, which is expanding its line of products and capabilities as a result of new efficient technologies available in the new plant.

Silver Springs Beer’n Brat Mustard: Men’s Health Magazine Names Silver Spring Beer’n Brat Mustard One of 125 “Best Foods for Men”

Silver Spring Gardens passed the mustard test with the Men’s Health magazine food expert advisory team, naming Silver Springs Beer’n Brat Mustard one of the top 125 healthy foods for men. The June issue of Men’s Health magazine, circulation 1.7 million, calls it “sharp as a good chef’s knife with a great spicy kick.”
The food experts’ panel selects brands from national companies, determines nutritional value and selects five or fewer products per food category that meet specific criteria and turn the foods that made the cut over to another group of food experts, according to Dolores Evangelista, Readers’ Service Group specialist at Men’s Health magazine.
“In a perfect world, the best food for you would also be the best tasting,” she said. “Since we live in the real world, we gave flavor the edge, having already weeded out each category’s poor nutritional performers. The result is the best tasting and best-for-you foods for guys.”

Silver Spring Beer’n Brat Horseradish Mustard was named the top horseradish mustard at the recent World-Wide Mustard Competition in Napa Valley, California. Ed Schaefer, president of Silver Spring Gardens, was presented a Gold Award for the mustard, which is also the official mustard of Lambeau Field, Green Bay, Wi.
In addition, Silver Spring Gardens cut the mustard with a silver award for Silver Spring Chipolte Mustard, which received silver in the “pepper hot” division. The two awards come on the heals of Silver Spring Gardens winning the Grand Champion Award last year for Bookbinder’s Hot Horseradish Mustard.
Food journalists and food sensory scientists judged 303 mustards from four countries, competing for top honors at the twelfth annual Napa Valley Mustard Festival.
